Mini gruyere frittatas

The easiest breakfast.



 
  • Best for: breakfast or snack (makes 8 frittatas)

  • Difficulty: easy

  • Time: 10 minutes prep, 30 minutes oven

 

This dish is a copycat of my favorite item from Trader Joe's, something I eat almost every day. My recipe is based on the ingredients list on the back of the box, and it turned out to be a very close imitation. These frittatas are perfect for brunch, or for making breakfast sandwiches. They also taste great reheated, so you can make a big batch at the beginning of the week.



Ingredients
6 large eggs, whisked
1 cup egg whites (or 3 additional eggs)
1 cup shredded swiss or gruyere cheese
1-2 sliced green onions
1/4 cup yellow onion
1/2-2/3 cup riced cauliflower (optional)
1/2 tsp garlic powder (optional)
salt
pepper
 

First...

Preheat oven to 350F. Dice and sauté yellow onion in a pan until golden. Remove from pan.

Sauté riced cauliflower until it becomes soft and is turning golden.


Then...

Place all ingredients in a small bowl and combine, salt and pepper to taste.

Pour evenly into 8 cups of a regular-sized muffin tin, lightly greased with cooking spray. Bake for 30 minutes.


Remove from oven and let cool one minute before removing from tin.

Refrigerate up to four days, or freeze.


(The frittatas might puff up a lot in the oven, but they will deflate as soon as they begin to cool.)
