This huge but healthy salad bowl is a copycat of what my Mom and I usually order at our favorite fast casual restaurant, Cava. I've been missing their mountainous servings and fantastic flavors, so I slowly accumulated ingredients to recreate them in my fridge. With my freshly pickled onions, the day had finally arrived.
Ingredients
1/3 cup pickled onions
2-3 cups mixed greens
3-4 cups eggplant, cut into 1-inch cubes
1/2 tsp coriander
1 tsp oregano
2 tbsp olive oil, divided
1 tbsp hummus
2 tbsp tzatziki (or greek yogurt mixed with a few drops of lemon juice)
5 cherry/grape tomatoes, halved
1/3 cup prepared lentils
1 tbsp mint
2 tsp dill
1 tbsp red chili paste
1 tsp lemon juice
salt
pepper
First...
Preheat oven to 425 degrees F.
Toss eggplant on a foil-lined sheet pan with 1 tbsp olive oil, coriander, oregano salt and pepper to taste.
Bake for 20-30 minutes, or until golden.
Then...
Toss greens with 1 tbsp oil and 1 tsp lemon juice.
Top with eggplant and all other toppings, arranging to your liking. Season with salt and pepper.
