Greek salad with herbed tofu feta

An easy, super-fresh salad. Tofu totally optional.

Best for: lunch (1 big serving)
Difficulty: very easy
Time: 15 minutes to assemble salad, 2 hours-to-a-week for marinating tofu

Just the salad
This salad is a pretty authentic Greek salad consisting mainly of big-chopped cucumbers and tomatoes, a big favorite of one of my best friends.
Ingredients
1 cup cucumber, sliced in half, seeds removed, then sliced into wedges
7-8 cherry or grape tomatoes, halved
1 oz/.25 cup of crumbled feta cheese (crumble from a block, omit if vegan)

dill
lemon juice
salt
pepper
First...
Chop cucumbers and tomatoes, toss with a bit of olive oil, lemon juice, and salt and pepper to taste. Add 1-2 tsp of dill to taste.
Then...
Crumble feta on top, add 3-4 mint leaves.
Herbed tofu feta (makes 2-3 servings):
I've included my recipe for herbed tofu feta, which is a very delicious way to add vegetarian protein to this salad (or anything!). I love feta cheese, and I promise the taste is incredibly similar. Feel free to omit it from the salad though, or replace it with grilled chicken breast chopped to equal size of the vegetables.
Ingredients
half a 14-16 oz package of extra-firm tofu
2 fresh garlic cloves minced
2 tbsp apple cider vinegar
1/2 lemon, juiced (about tbsp of juice)
2 tablespoon water
1 tablespoons nutritional yeast (unattractive name, amazing cheese-y flavor)
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 tsp dried parsley
Optional: 1/2 tbsp olive oil
pinch of sea salt
black pepper to taste
First...
Chop feta into 1-inch cubes (should be about 24 cubes)
Then...
Prepare the marinade. Whisk together all ingredients in a bowl until combined. Add to a jar or an airtight container with the cubes of. Mix well and place the container in fridge. Let tofu marinade for at least 2 hours, but I let it marinate for 4-5 days. The longer, the better!
Suggestions: in addition to any salad, this would be great in tacos with shredded purple, cabbage, salsa, guac, and sour cream!
