Any dish you love can exist in salad form, I promise.

Best for: lunch (1 big serving)

Taco salad
Ingredients
3 cups baby arugula, washed
7-8 cherry or grape tomatoes, halved
1/4 cup of mexican blend cheese or goat cheese
1/2 avocado, sliced
about 4 large tortilla chips
3 tbsp red onion, diced

lemon juice
salt
pepper

Toss all the ingredients, arrange and add more or less as you like.
Salad hacks:
Wash your greens, no matter what the package says. The salad will taste much better.
Add tortilla chips or sliced red/purple for crunch.
Add lentils or orzo for an amazing texture.
Retreat from lettuce. Spinach, kale, and arugula have more flavor and health benefits.
Massage your kale to death.
Try a warm salad with roasted sweet potato, squash or zucchini (don't use lettuce).
Quickest, tastiest salad ever: slice an 8 oz package of fully-cooked beets in half and toss with 1/4 cup of goat cheese.
A great work lunch: 7-8 cooked cheese ravioli, cooled and tossed with arugula, tomatoes, olive oil, and goat cheese. Keep in refrigerator.
Mediterranean flavors: oregano, dill, mint, feta.
Mexican/Spanish flavors: paprika, cumin, parsley, corn, goat cheese.
Italian flavors: basil, oregano, thyme, parmesan.
How would this work if I sub the arugula with horse meat?
