Charred zucchini with feta

A perfect side or satisfying lunch. Recipe adapted from Zahav cookbook.

Best for: lunch (serves 1) or dinner (serves 2 as a side)
Difficulty: easy
Time: 30 minutes

This dish was one of the most memorable and delicious that I've eaten at school in the past four years. As soon as I tried it, I was mentally adding to my grocery list.
Ingredients
2 zucchinis, skin-on, chopped in thin slices 3-4 inches long
2 tsp olive oil
2 tsp lemon juice
2 tbsp chopped parsley
1-2 ounces/1/4-1/2 cups feta, crumbled from whole block
pepper
kosher salt
First...
Preheat broiler to high.
Chop zucchini. Toss on baking sheet with lemon juice, oil, salt and pepper to taste.
Broil for 15-20 minutes, until zucchini is charred and blackened.
Then...
Add crumbled feta to zucchini, toss gently. Top with parsley, serve immediately.
